Bacon Cheese Corn Muffins

Recipe via RS - Mauren Lister

Yield 12 muffins


Sift together:
     1 cup flour
     1 cup cornmeal
     2 TBSP sugar
     1 tsp salt
     1/2 tsp baking soda
     1 1/2 tsp baking powder

Beat well:
     2 eggs
     1/4 oil
     1 cup buttermilk

Add:
     3/4 cup grated cheese
     5 -6 strips cooked crumbled bacon

add liquid to dry all at once and stir until moist

Fill greased muffin cups 2/3 full

Bake @ 425* for 15 -18 minutes
