Island Pork Tenderloin

Seriously, this was soooo good!! 
 It was easy and fast and tasted gourmet! 
The spices come together perfectly -
 the flavor is superb
and the meat is very moist!
I love it!

16.oz pork tenderloin, lean

Rub:
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. chilli powder
1/2 tsp. ground cumin
1/2 tsp. cinnamon
2 tsp.olive oil

Topping:
1/4 cup brown sugar, packed
½ tbsp. fresh garlic, finely chopped
1/2 tbsp. tabasco sauce or Sirachi hot sauce (amount according to taste

1.Preheat oven to 350 degrees.

2.In a cake pan - stir together salt, pepper, cumin, chile powder, and cinnamon - then coat pork with the spice rub - rolling it in the spices.
3. Heat 1 tbsp. oil in a frying pan over moderately high heat and brown pork, turning after a couple minutes - just long enough to sear each side and make a crusty coating - about 4 minutes.
4.Stir together brown sugar, garlic, and tabasco and pat onto top of tenderloin. Line a roasting pan with foil (for easy clean up) and place pork in pan and cook in the oven for 20 min.

***Can eat meat as part of a meal with side dishes or use in a salad

Island Pork Tenderloin Salad
1/2 orange, peeled & cut
1 cup fresh spinach
1/2 red pepper, cut into strips
1 tbsp. golden raisins
1 cup cabbage shredded
Slices of Island Pork Tenderloin
Vinaigrette of your choice

Mix together and enjoy! mmmm.

Sweet and Sour Ribs

Brown spare ribs

Sauce:
2 TBSP soya sauce
1/4 cup vinegar
1/4 cup ketchup
1/3 cup brown sugar

OR

1 cup brown sugar
1 cup water
3/4 cup vinegar
2 cups chopped onion
1/2 bottle ((1 cup) ketchup
salt to taste
2 TBSP cornstarch
1 TBSP soya sauce
Lemon juice

Mix and bring to a boil

Pork Wraps


Recipe via Suzanne Purnell

2 -3 lb pork tenderloin roast

Put in slow cooker until cooked and tender - shred

Add:
     2/3 cup salsa
     1/3 cup brown sugar
Let simmer in crock pot for a couple of hours

To make wraps add any of the following combination as desired:
Tortilla shells
shredded pork meat
lettuce
tomatoes
corn
black beans
grated cheese
cooked rice
Cilantro lime dressing


Cilantro Lime Dressing:

1 1/2 cups sour cream
3/4 cup mayonnaise
1 pkg Hidden Valley Ranch dressing
1 fresh bunch of cilantro
2 cloves garlic
4 TBSP Salsa Verde (green salsa)

Blend

Use for salad dressing or on pork tenderloin wraps

Mushroom Pork Chops

Prep Time: 5 Minutes
Cook Time: 35 Minutes Ready In: 40 Minutes
Servings: 4
"Transform cream of mushroom soup into a delicious simmering sauce by tossing in some chopped onion and sliced fresh mushrooms. Add to seasoned and sauteed pork chops and you have a rich and creamy one-pan meal."

Ingredients:
4 pork chops
salt and pepper to taste
1 pinch garlic salt, or to taste
1 onion, chopped 1/2 pound fresh mushrooms,
sliced
1 (10.75 ounce) can condensed cream of mushroom soup

Directions:
1. Pour a little olive oil in the pan and sautee a clove of garlic... Season pork chops with salt, pepper, and garlic salt to taste.

2. In a large skillet, brown the chops over medium-high heat. Add the onion and mushrooms, and saute for one minute. Pour cream of mushroom soup over chops. Cover skillet, and reduce temperature to medium-low. Simmer in pan on stove OR Bake in oven 20 to 30 minutes, or until chops are cooked through

Slow Cooker Pork Chops

Put in a crock pot or oven roaster if you don't have a slow cookier:
     Pork chops (lightly browned)
     Potatoes (optional)
     Carrots (optional)
     Onions
     Can of mushroom soup

Cook on slow all day

About 20 minutes before serving add:
     small container of sour cream

Variation of  Slow Cooker Pork Chops:

Prep Time: 30 minutes

Cooking Time: 8 hours, 15 minutes
Makes: 4 servings

2 Tbsp. vegetable oil
4 large (about 7 oz. each) pork chops
Salt and freshly ground black pepper to taste
1/2 lb. brown mushrooms, sliced
1/4 lb. shiitake mushrooms, stems discarded, caps quartered
1 (5” wide) portobello mushroom, cut into 1/2” cubes
1 medium onion, halved and thinly sliced
1 garlic clove, chopped
1 Tbsp. chopped fresh sage
1/4 cup flour
2 1/2 cups chicken stock
Fresh sage sprigs, for garnish (optional)

Method:
Heat oil in a skillet set over medium-high. Season chops with salt and pepper. Brown well and set in your slow cooker. Add mushrooms and onion to the skillet and cook until tender, about 5 minutes. Mix in the garlic, flour and sage; slowly mix in stock. Bring the sauce to a simmer, and then pour over the pork. Cook on the low setting 8 hours. Plate the chops, top with sauce, garnish, if desired, and serve.

Note: This recipe is designed for an oval-shaped slow cooker with a 5 litre or more capacity.

What to serve alongside:
Serve the pork with a couple of tasty side dishes created from recipes in our website collection, such as Buttermilk-Mashed Yukon Gold Potatoes, and Green Beans with Walnuts and Blue Cheese.

Options:
Instead of pork, use veal chops in this recipe. If you like chicken, use four boneless, skinless chicken breasts in place of the pork. To simplify things, only use one type of mushroom in this recipe, such as white or brown mushrooms. As an alternative to fresh sage, try fresh rosemary or thyme.

Sausage and Carrot Casserole

Brown sausages infry pan
In pan drippings make a flour/water gravy

Mix together in bowl:
     1 can cream of mushroom soup
     1 pkg onion soup mix
     Just enough water to make a sauce (1/4 cup)
     1 tsp mustard

Add to gravy mixture

Pour over:
     sausages
     cut up potatoes
     carrots
     onions

Bake @ 350* until vegetabels are done

Pork Ribs in Sauce

Simply deslish!!!

1 ½ cups ketchup
1 ½ cups water
¾ cups chili sauce
½ cup vinegar
6 TBSP Worcestershire sauce
6 TBSP brown sugar
3 TBSP lemon juice
1 TBSP paprika
1 clove garlic
Dash hot sauce
Dash pepper
5 lb pork ribs

Combine all ingredients in sauce pan – heat to boiling – simmer 30 minutes

Cut ribs into rib portions
Bake in roaster 30 minutes @ 450*
Drain off fat

Pour sauce over ribs and bake again @ 300* for 1 ½ hrs

Sweet 'N Sour Sauce

2 cups brown sugar - packed
2 tsp flour
1/2 cup vinegar
1/3 cup water
2 TBSP soya sauce
2 TBSP Ketchup

Makes 3/4 cup sauce
Can just pour over chicken / ribs / meatblalls
or just cook sauce in pot first and serve over rice

BBQ Sauce for Ribs or Chicken

1 cup brown sugar - packed
2 TBSP cornstarch
2 cloves minced garlic (add when cooking meat)
1 cup water
3 TBSP soya sauce

Makes 1 1/3 cups sauce

May want to double for extra sauce.
