Shelly's Coconut Cupcakes


Recipe via Shelly Prince

1 cake mix - made into cupcake and taken out of paper cups (papers may be left on if desired and just dip the tops of the cupcakes)

Mix together:
     2 cups icing sugar
     1 TBSP butter
     1 tsp vanilla
     food coloring

To icing sugar mixture add:
     boiling water 1 TBSP at a time - just enough till icing is runny but thicker - like soup


Dip cupcakes in icing

Roll cupcakes in:
     super fine coconut

Dry on cake rack
Store in airtight container
Freezes well
