Twinkies


Recipe via RS
2 -3 cake mixes (48 -72 cupcakes) - 1 cake mix makes about 24 cupcakes

Filling Option #1: 
Mix until smooth in saucepan:
     5 TBSP flour
     5 TBSP sugar
     1 cup milk

Cook mixture on medium until thickened (can be microwaved)
Whip with mixer

Cream toghether:
     1/2 cup margarine
     1/2 cup Crisco
     1 cup sugar
     1 tsp vanilla
     salt

Add to cooled first mixture
Whip until smooth - not granular

Use pastry bag and large tip (9-10-11) or long tube tip

Insert tip and turn cupcake while squeezing bag.  Let icing go into cake for a few seconds before you pull out the tip

Super for lunchs, picnics etc - Not messy!!
 Freeze well


Filling Option # 2: 
Cook to a smooth sauce and cool:
     1/2 cup milk
     2 TBSP flour

Whip in:
     1/2 cup Crisco
     1/2 cup icing sugar

When making this version - the cakes should be nearly cool
Ice tops after if desired

Easier to fill cupcakes if leave in muffin tins to fill
