Soft Gingersnaps (Mokkans)


Recipe via Amie Strong

Makes a very soft round cookie.

Cream together:
     2 eggs
     1 1/2 cups oil
     2 cups sugar

Add:
     4 cups flour
     4 tsp soda
     2 tsp cinnamon
     1/2 tsp salt
     2 tsp ginger
     1/2 cup molasses

Chill 1 hour and roll into balls
Roll balls in sugar ~ DO NOT FLATTEN
Bake @ 350* for 8 minutes.
