Recipe via Joyce
1 chicken or 2 chicken breasts
1/2 tsp soda
1 cup water
1 - 15 oz can pineapple chunks
2 carrots
1 cup pineapple juice - enough water to make 1 cup
1/3 cup water
1 cup flour
1/2 cup cornstarch
1 tsp baking powder
1 tsp soya sauce
3 TBSP brown sugar
2 TBSP vinegar1 green pepper
cooking oil
Salt & pepper to taste
Batter:
Mix flour, cornstarch, baking soda, baking powder
Stir in 1 cup water
Prepare chicken - skin and debone, cute into bite size pieces, wash and towel dry, salt and pepper
Cut carrots thin and on the slant. Place in little amount of water and cook without lid.
Dip chicken in batter, heat oil in skillet, when hot fry battered chicken until golden brown.
In pan, heat pineapple juice, brown sugar, vinegar
Add carrots and pineapple chunks.
Add soya sauce - bring to boil
Add 1 1/2 TBSP cornstarch mixed in 1/3 cup water.
Simmer, turn off heat (will thicken)
Pour over chicken and mix through.
Add green pepper last.
